Instructions:
In a blender or food processor, combine the frozen pineapple chunks, coconut milk, honey (if using), and vanilla extract.
Blend on high until the mixture becomes smooth and creamy, scraping down the sides as needed.
Once the mixture is fully blended and soft-serve in texture, serve immediately for a soft consistency or freeze for 1-2 hours for a firmer texture.
