Ingredients

For the chicken:

1 1/2 lbs chicken tenders or cutlets

1 cup buttermilk

1 teaspoon hot sauce (optional)

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

Oil for frying

For the honey butter:

1/4 cup butter

1/4 cup honey

Pinch of salt

Instructions

Start by soaking the chicken in buttermilk and hot sauce for at least 20 minutes (or up to 4 hours for extra tenderness).

In a bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.

Heat oil to 350°F (175°C).

Remove chicken from buttermilk, letting excess drip off, and dredge in the flour mixture. Press the coating on well for extra crunch.

Fry chicken in batches for 4–6 minutes, until golden, crispy, and cooked through. Drain on paper towels.

To make the honey butter, melt butter in a small saucepan.

Stir in honey and a pinch of salt until smooth and glossy.

Brush or drizzle the warm honey butter over the hot crispy chicken.

Serve immediately — with biscuits, waffles, or on its own.
