Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste

  • 1/2 cup honey
  • 1/4 cup balsamic vinegar
  • 1 cup fresh or dried cranberries
  • 1/2 cup crumbled feta cheese
  • 1 tsp dried thyme or rosemary
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a bowl, whisk together honey, balsamic vinegar, and thyme.
  4. Place chicken in the baking dish and pour the honey mixture over it.
  5. Scatter cranberries over the chicken and sauce.
  6. Cover with foil and bake for 20 minutes.
  7. Remove foil and bake another 15–20 minutes until chicken is cooked through.
