Ingredients

  • 1 lb (450 g) carrots, peeled and cut into sticks
  • 2 tbsp olive oil (30 ml)
  • Salt and black pepper, to taste
  • 2 tbsp honey (30 ml)
  • ½ tsp chili flakes (optional, adjust to heat preference)
  • ¼ cup (30 g) toasted walnuts, roughly chopped
  • ¼ cup (50 g) crumbled feta cheese
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat Oven:
    Set your oven to 400°F (200°C).
  2. Season the Carrots:
    Place the carrot sticks on a baking sheet.
    Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
  3. Roast:
    Roast for 20–25 minutes, or until the carrots are tender and slightly caramelized.
  4. Add Hot Honey:
    In a small bowl, mix the honey with chili flakes.
    Drizzle the hot honey over the roasted carrots and toss gently.
    Return to the oven for 5 more minutes to let the glaze set.
  5. Finish & Serve:
    Transfer carrots to a serving plate.
    Top with toasted walnuts, crumbled feta, and parsley if using.
