🔥 Hot Honey Roasted Carrots with Feta & Toasted Walnuts

Ingredients
1 lb (450 g) carrots, peeled and cut into sticks
2 tbsp olive oil (30 ml)
Salt and black pepper, to taste
2 tbsp honey (30 ml)
½ tsp chili flakes (optional, adjust to heat preference)
¼ cup (30 g) toasted walnuts, roughly chopped
¼ cup (50 g) crumbled feta cheese
1 tbsp fresh parsley, chopped (optional)
Instructions
Preheat Oven: Set your oven to 400°F (200°C).
Season the Carrots: Place the carrot sticks on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
Roast: Roast for 20–25 minutes, or until the carrots are tender and slightly caramelized.
Add Hot Honey: In a small bowl, mix the honey with chili flakes. Drizzle the hot honey over the roasted carrots and toss gently. Return to the oven for 5 more minutes to let the glaze set.
Finish & Serve: Transfer carrots to a serving plate. Top with toasted walnuts, crumbled feta, and parsley if using.
Tips & Variations
Add a squeeze of lemon for brightness.
Substitute goat cheese for feta for a creamier version.
Use maple syrup + chili powder if you prefer a maple-style hot honey.
