Ingredients
Cherry tomatoes
Cucumber
Green pepper
Kalamata olives
Red onions
Greek feta cheese
For the dressing:
4 tbsps olive oil
1 tsp vinegar
Salt and pepper
Dash of sugar
1/2 tsp oregano
1/2 tsp dijon mustard
Instructions:
– Chop cherry tomatoes, cucumber, green pepper, and red onions.
– Combine with Kalamata olives in a large bowl.
– In a small bowl, whisk together olive oil, vinegar, salt, pepper, sugar, oregano, and Dijon mustard.
– Pour the dressing over the salad and toss gently.
– Top with generous chunks of Greek feta cheese.
