We’re layering sweet blackberries, tart raspberries, and fresh blueberries with a silky vanilla cheesecake cream. It’s cold, creamy, and every spoonful gives you juicy berries + rich vanilla + fluffy whipped cream. No baking, no guilt, no weird aftertaste.
It looks fancy enough for a BBQ but takes 10 minutes to throw together. Perfect for meal prep, parties, or when your sweet tooth hits at 9 PM. Red, white, and blue never tasted this good.
Makes: 2 large parfaits or 4 mini cups
Ingredients
For the Vanilla Cheesecake Cream:
8 oz cream cheese, softened
½ cup heavy whipping cream
⅓ cup powdered allulose or erythritol
1 tsp vanilla extract
Pinch of salt
For the Berry Layers:
½ cup blackberries
½ cup raspberries
½ cup blueberries
3-4 strawberries, sliced for topping
For the Whipped Topping:
¾ cup heavy whipping cream
1 tbsp powdered sweetener
½ tsp vanilla extract
Instructions
Whip the cream layer: Beat softened cream cheese, ½ cup heavy cream, powdered sweetener, vanilla, and salt with a mixer for 2 mins until smooth and fluffy like cheesecake batter. Taste it. Try not to eat it all.
Make the whipped topping: In a clean bowl, beat ¾ cup heavy cream, 1 tbsp sweetener, and ½ tsp vanilla to stiff peaks. Pop it in a piping bag or ziploc if you want it pretty.
Build your parfait: Grab 2 clear cups. Start with blackberries on the bottom. Add a layer of the cheesecake cream. Next, raspberries. Another cream layer. Then blueberries.
Crown it: Pipe a huge swirl of whipped cream on top. Add extra raspberries, blueberries, and a sliced strawberry like in the pic.
Chill or devour: You can eat it right away, but 20 mins in the fridge lets the layers set and taste even better.
Pro Tips to Level It Up
Room temp cream cheese: Cold cream cheese = lumpy cream layer. Leave it out 30 mins or microwave 15 seconds.
Berry macro hack: Raspberries and blackberries are lowest carb berries. Blueberries have more, so keep them as the accent. Strawberries are fine in small amounts.
Meal prep win: Make these in mason jars with lids. They hold 3-4 days in the fridge. Add the whipped cream right before serving so it stays fluffy.
Extra flavor: Add ½ tsp lemon zest to the cheesecake cream. Lemon + berries = chef’s kiss.
Crunch factor: Sprinkle 1 tbsp of crushed keto granola or chopped pecans between layers if you miss that parfait crunch.
