- Β½ cup (120g) cottage cheese
- ΒΌ cup (25g) almond flour
- Zest of 1 lemon
- 1 tbsp (15ml) lemon juice
- 1Β½ tbsp (30g) honey (or maple syrup for vegan)
- 2 tbsp (30g) dried blueberries
π§ Optional Add-Ins:
- 1 tbsp chia seeds or flax meal (for fiber boost)
- 1 scoop vanilla or plain protein powder (adjust texture if needed)
- Pinch of sea salt
π΄ Instructions:
- Blend Base:
- In a food processor or blender, combine cottage cheese, almond flour, lemon zest, lemon juice, and honey.
- Blend until smooth and thick.
- Fold in Blueberries:
- Stir in the dried blueberries (and any optional mix-ins) by hand.
- Chill & Roll:
- Chill mixture in the fridge for 10β15 minutes to firm up.
- Scoop and roll into bite-sized balls using your hands or a small cookie scoop.
- Store:
- Keep in an airtight container in the fridge for up to 5 days.
- Freeze for longer storage (just let them thaw a few minutes before snacking).
