- 1/2 cup (113 g) butter, softened
- 3/4 cup sugar (or sugar-free substitute like erythritol)
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup buttermilk (or 1/2 cup milk + 1 tsp vinegar)
- 1 tsp vanilla extract
- 2 cups mixed berries (raspberries, blueberries, blackberries)
- Powdered sugar, for dusting
🍽️ Instructions
1. Preheat Oven
Preheat to 350°F (175°C).
Grease and flour a 9-inch round cake pan.
2. Prepare the Batter
In a bowl:
- Beat butter + sugar until fluffy.
- Add eggs one at a time, beating well.
- Mix in vanilla.
In a separate bowl, whisk:
- Flour
- Baking powder
- Salt
Alternate adding dry ingredients and buttermilk into the butter mixture.
Mix just until smooth — don’t overmix.
3. Add the Berries
- Fold in 1 cup of the mixed berries gently.
- Pour batter into the prepared pan.
- Scatter the remaining 1 cup berries on top.

4. Bake
Bake for 40–50 minutes, or until:
- The top is golden
- A toothpick inserted comes out clean
5. Cool & Dust
Let cool completely.
Dust with powdered sugar.
Slice into 8 wedges — just like the photo.
