Oatmeal, Apple & Carrot Breakfast Bake (No Sugar, No Flour)

Ingredients:

  • 2 cups (200 g) rolled oats, ground/chopped in a blender
  • 1 teaspoon baking powder
  • 1 cup (240 ml) milk of your choice
  • 1 carrot, grated
  • 1 apple, grated or finely chopped
  • 9 dried apricots, rinsed with hot water and chopped
  • 4 tablespoons raisins, rinsed with hot water

Instructions:

  1. Preheat Oven:
    • Preheat oven to 350ยฐF (175ยฐC). Grease or line a small baking dish.
  2. Mix Dry Ingredients:
    • In a large bowl, combine ground oats and baking powder.
  3. Add Wet Ingredients:
    • Stir in milk, grated carrot, grated apple, chopped apricots, and raisins. Mix until evenly combined.
  4. Bake:
    • Pour mixture into prepared dish. Bake for 25โ€“30 minutes, or until set and lightly golden on top.
  5. Serve:
    • Let cool slightly before serving. Can be enjoyed warm or at room temperature.
