Ingredients
- 1 lb fresh okra, trimmed and sliced
- 1 can (14.5 oz) diced tomatoes, or 2 cups fresh chopped tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 small green bell pepper, chopped
- 2 tbsp olive oil
- ½ cup chicken or vegetable broth
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp dried thyme
- ¼ tsp cayenne pepper, optional
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- 1 tsp Worcestershire sauce, optional
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper and sauté for 4–5 minutes, until slightly softened.
- Add garlic and cook for another 30 seconds.
- Add sliced okra and cook for 5–7 minutes, stirring occasionally.
- Stir in tomatoes, broth, smoked paprika, garlic powder, thyme, cayenne, salt, black pepper, and Worcestershire sauce.
- Bring to a gentle simmer. Reduce the heat, cover, and cook for 12–15 minutes, stirring occasionally.
- Remove the lid and cook another 3–5 minutes if you want the sauce thicker.
- Taste and adjust the seasoning before serving.

Serve warm alongside rice, cornbread, grilled chicken, fried fish, or pork chops.
