Ingredients
- 450g (1 lb) lean ground beef or turkey
- 1 tablespoon olive oil or low-calorie spray
- 1 small onion, diced
- 2 cloves garlic, minced
- 1½ cups chopped cauliflower (low-carb potato substitute — or use 150g cooked baby potatoes for Slimming)
- ½ cup beef or chicken stock
- ½ cup light cream cheese or fat-free Greek yogurt
- ½ cup shredded mozzarella or reduced-fat cheese (Healthy Extra A on Slimming)
- ½ teaspoon smoked paprika
- Salt & pepper, to taste
- Optional: spinach, mushrooms, or green beans for added fiber
Instructions

Cook the Meat:
Heat olive oil in a large skillet over medium heat.
Add ground beef and cook until browned, breaking it apart. Remove any excess fat if needed. -
Add Veggies:
Stir in onion and garlic; sauté for 2–3 minutes.
Add chopped cauliflower (or diced potatoes) and cook for another 5 minutes. -
Make it Creamy:
Pour in the stock and let it simmer until the cauliflower (or potatoes) are tender, about 8–10 minutes.
Stir in cream cheese (or Greek yogurt), paprika, salt, and pepper. Mix until the sauce thickens and turns creamy. -
Add Cheese & Melt:
Sprinkle mozzarella on top, cover the pan, and let it melt for 2–3 minutes. -
Serve Hot:
Garnish with parsley or chives and serve straight from the skillet.
