Ingredients:

  • 1 ½ lbs ground beef (or shaved steak if preferred)
  • 2 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 8 oz mushrooms, sliced (optional)
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Worcestershire sauce (check for keto-friendly brands)
  • 4 oz cream cheese, softened
  • ½ cup heavy cream
  • 1 cup shredded provolone or mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions:

Step 1: Sauté the Veggies

  1. Heat 2 tbsp olive oil in a large skillet over medium heat.
  2. Add the onion, green bell pepper, red bell pepper, and mushrooms (if using). Sauté for about 5–7 minutes, or until the vegetables are tender and lightly browned.
  3. Add 2 cloves garlic and cook for an additional 1 minute until fragrant. Remove from heat and set aside.

Step 2: Cook the Beef

  1. In the same skillet, add 1 ½ lbs ground beef (or shaved steak) and cook over medium heat until browned, breaking it apart as it cooks.
  2. Season with 1 tsp salt, ½ tsp black pepper, and 1 tsp Worcestershire sauce. Stir to combine, then remove from heat.

Step 3: Make the Creamy Sauce

  1. In a medium saucepan, combine 4 oz cream cheese and ½ cup heavy cream. Heat over low-medium heat, stirring constantly until smooth and creamy.
  2. Once the mixture is smooth, add 1 cup shredded provolone (or mozzarella) and 1 cup shredded cheddar cheese. Stir until the cheese is melted and the sauce is thickened.

Step 4: Assemble the Casserole

  1. Preheat your oven to 350°F (175°C).
  2. In a large casserole dish, combine the sautéed vegetables and beef mixture. Pour the creamy cheese sauce over the top and stir until evenly distributed.
  3. Spread the mixture into an even layer and top with additional shredded cheese if desired.

Step 5: Bake

  1. Bake in the preheated oven for about 15–20 minutes, or until the top is bubbly and golden brown.

Step 6: Serve and Enjoy

  1. Let the casserole cool slightly before serving.
  2. Garnish with chopped parsley or extra pepper if desired.
