Ingredients
For the Pudding
- 750 ml whole milk
- 135 g granulated sugar
- 9 egg yolks
- 2 tsp vanilla extract
- 2 tbsp cornstarch
- 20 ml milk (for cornstarch mixture)
- 1 tbsp cinnamon powder
Instructions

Heat the milk
Pour 750 ml milk into a saucepan and bring to a boil over medium heat. -
Make the caramel
In a separate pan, heat 135 g granulated sugar until it melts and turns into caramel. Stir gently. -
Combine caramel and milk
Once the milk is heated, remove it from the heat and slowly pour it into the melted sugar, stirring constantly with a spatula until fully combined. Let the caramel milk cool slightly. -
Whisk the egg yolks
In a large bowl, whisk the 9 egg yolks with 2 tsp vanilla extract until smooth. -
Mix in the caramel milk
Slowly pour the warm caramel milk into the egg mixture, whisking continuously to combine. -
Add cornstarch
In a small bowl, mix the 2 tbsp cornstarch with 20 ml milk until dissolved. Add the cornstarch mixture to the egg and caramel milk mixture, whisking to combine. -
Cook the pudding
Transfer the mixture to a clean saucepan. Cook over low heat, stirring constantly with a whisk, for about 10 minutes or until the mixture thickens into a smooth pudding. -
Cool & serve
Pour the pudding into 4 dessert glasses. Let the pudding cool to room temperature, then refrigerate for 4 hours to fully set. -
Garnish & enjoy
Sprinkle a pinch of cinnamon powder over each pudding before serving. Serve chilled.
