PINK COCONUT SNOWBALL CAKE BARS
For the Chocolate Cake Base:
1 cup all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/3 cup olive oil or melted coconut oil
2 eggs
1/2 cup milk or plant-based milk
1 teaspoon vanilla extract
For the Cream Layer:
1 1/2 cups marshmallow fluff or whipped cream
1/2 teaspoon vanilla extract
For the Pink Coconut Topping:
1 1/2 cups shredded coconut
1–2 drops pink food coloring
1 tablespoon milk or water (to help mix color evenly)
