Ingredients

Main Ingredients

  • 1 lb Italian sausage
  • 1 lb ground beef
  • 8 oz mushrooms, chopped
  • 2 tsp garlic, minced
  • 1 cup zucchini, chopped
  • 3 cups spinach
  • ยฝ cup bell pepper, chopped

For the Soup Base

  • 1 tbsp Italian seasoning
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 (6 oz) can tomato paste
  • 1 (32 oz) container beef broth

For Creaminess

  • 4 oz cream cheese, softened
  • ยผ cup heavy cream

For Serving (Optional)

  • Shredded mozzarella or Parmesan

Instructions

Instant Pot Method

  1. Brown the meat
    Turn the Instant Pot to Sautรฉ. Lightly spray the bottom and cook the Italian sausage and ground beef until browned. Drain excess grease.
  2. Add vegetables & base
    Turn off sautรฉ. Add mushrooms, garlic, zucchini, spinach, bell pepper, Italian seasoning, diced tomatoes, tomato paste, and beef broth. Stir well.
  3. Pressure cook
    Secure the lid, set valve to Sealing, and cook on Manual / Pressure Cook for 15 minutes.
    Allow 5โ€“10 minutes natural release, then carefully release remaining pressure.
  4. Finish creamy
    Stir in softened cream cheese and heavy cream until fully melted and smooth.
  5. Serve
    Ladle into bowls and top with shredded cheese if desired.

Stovetop Method

  1. Cook the meat
    Heat a large pot over medium heat. Brown sausage and ground beef, breaking it up as it cooks. Drain grease.
  2. Sautรฉ veggies
    Add mushrooms, garlic, zucchini, and bell peppers. Cook for 5 minutes, stirring occasionally.
  3. Simmer
    Add beef broth, tomato paste, diced tomatoes, and Italian seasoning. Bring to a simmer and cook for 25 minutes, stirring occasionally.
  4. Finish creamy
    Stir in cream cheese, heavy cream, and spinach. Cook just until spinach wilts and soup is smooth.

Additional Notes

  • Donโ€™t worry if it looks low on liquid at firstโ€”the veggies release moisture as they cook.
  • Storage: Keeps well in the fridge for 3โ€“4 days. Reheat gently.
