  • Salt and pepper to taste

Instructions:

  1. Toast the bread:
    • Start by toasting the bread to your desired level of crispness. You can lightly butter the toast for added flavor, if preferred.
  2. Poach the eggs:
    • Fill a medium saucepan with water (about 3 inches deep) and bring it to a simmer over medium heat. Add a small splash of vinegar (optional) to help the egg whites set.
    • Crack each egg into a small bowl (this makes it easier to slide into the water).
    • Carefully slide each egg into the simmering water, one at a time. Poach the eggs for 3โ€“4 minutes for soft, runny yolks. Adjust the time if you prefer firmer yolks.
    • Once done, use a slotted spoon to gently remove the eggs from the water. Place them on a paper towel to drain.
  3. Assemble the dish:
    • Place the toasted bread on a plate.
    • Gently place a poached egg on top of each slice of toast.
  4. Season and garnish:
    • Sprinkle with a pinch of salt and pepper.
    • Garnish with fresh chopped chives for a burst of color and flavor.
  5. Serve:
    • Slice the toast if desired and enjoy the warm, runny yolk paired with the crispy toast!
