Potato & Meatball Bake (Lightened Up)

Ingredients:

  • 3 large potatoes, peeled & thinly sliced
  • 1 small white onion, finely chopped
  • 300g lean ground meat (chicken or turkey for lower points)
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tbsp breadcrumbs (or oats for lower points)
  • Salt & black pepper
  • 1 tsp paprika
  • 1 tsp dried parsley
  • ½ cup low-fat shredded mozzarella
  • ½ cup tomato sauce (no sugar added)
  • Cooking spray

 Instructions:

  1. Preheat oven to 180°C (350°F). Lightly spray a baking dish.
  2. Prepare the meatballs:
    In a bowl, mix ground meat, onion, garlic, egg, breadcrumbs, and spices.
    Form into small meatballs.
  3. Slice potatoes thinly (this helps them cook evenly).
  4. Assemble:
    • Arrange potato slices and meatballs alternately in the dish (like in the photo).
    • Pour tomato sauce evenly over the top.
  5. Bake covered with foil for 35–40 minutes until potatoes soften.
  6. Add cheese and bake uncovered for another 10–15 minutes until golden and bubbly.

 WW Tips:

  • Use extra-lean meat to reduce points
  • Swap breadcrumbs for oats or skip completely
  • Use reduced-fat cheese (or less of it)
