Ingredients
2 ripe bananas, mashed
2 large eggs
2 cups rolled oats
1/3 cup honey
1 cup milk (dairy or plant-based)
1 teaspoon baking powder
Optional add-ins:
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup chocolate chips or chopped nuts
1/4 cup raisins or dried cranberries
2 tablespoons chia seeds or ground flaxseed
Instructions
Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
In a large mixing bowl, mash the bananas until smooth with only small lumps remaining.
Add the eggs and whisk well until fully combined and slightly frothy.
Stir in the honey and milk. If using vanilla, add it now.
Add the rolled oats, baking powder, and optional cinnamon or salt. Mix until everything is evenly incorporated. Let the mixture rest for about 5 minutes so the oats can absorb some liquid and soften slightly.
Fold in any optional add-ins if desired.
Pour the batter into the prepared pan and spread it evenly with a spatula.
Bake for 25 to 30 minutes, or until the center is set and a toothpick inserted in the middle comes out clean.
Remove from the oven and allow to cool in the pan for at least 15–20 minutes before slicing. For cleaner cuts, let them cool completely.
