Ingredients
- 2 cups plain nonfat Greek yogurt
- 1 tub (8 oz) Cool Whip Lite or light whipped topping
- 1 small box (1 oz) sugar-free cheesecake or vanilla Jell-O pudding mix
- ½ cup fat-free milk
- 1 tsp vanilla extract
- 1 cup strawberries, chopped
- 1 cup blueberries
- 1 cup raspberries or mixed berries
- 2 tbsp graham cracker crumbs (optional)
Instructions
- In a large bowl, whisk together the Greek yogurt, pudding mix, milk, and vanilla extract until smooth and creamy.
- Fold in the whipped topping gently until light and fluffy.
- Add the strawberries, blueberries, and raspberries. Stir carefully to combine without crushing the berries too much.
- Divide the mixture evenly into serving cups.
- Sprinkle graham cracker crumbs on top for a cheesecake-style finish if desired.
- Refrigerate for at least 30 minutes before serving.
Tips
- For extra protein, add a scoop of vanilla protein powder.
- Frozen berries work too — just thaw and drain excess liquid first.
- Makes about 4–6 servings.
