  • 1 cup brown sugar
  • ยผ cup granulated sugar
  • ยฝ cup (120 g) pure pumpkin puree
  • 2 teaspoons vanilla extract
  • 3 tablespoons maple syrup

Roll/Top

  • ยผ cup sugar + 1 teaspoon cinnamon (for rolling)
  • Optional: chopped pecans
  • Optional: maple glaze (powdered sugar + maple syrup)

Instructions

1. Prepare the dough

In a bowl, whisk flour, soda, baking powder, salt, and spices.

2. Mix wet ingredients

Whisk melted butter, brown sugar, granulated sugar, pumpkin puree, maple syrup, and vanilla until smooth.

3. Combine

Add dry ingredients into the wet mixture and stir until just combined.
Chill dough for 30 minutes.

4. Shape cookies

Scoop dough, roll into balls, and coat in cinnamon sugar.

5. Bake
