Ingredients:
For the salad:
3 medium beets
2 tbsp olive oil
Salt and black pepper to taste
2 large oranges
1 ripe avocado, sliced
3 cups arugula or mixed greens
1/4 red onion, thinly sliced
1/4 cup toasted walnuts or almonds
2 tbsp feta cheese (optional)
For the dressing:
3 tbsp extra virgin olive oil
1 tbsp fresh orange juice
1 tbsp lemon juice
1 tsp honey
1 tsp Dijon mustard
