Sausage & Veggie Rice Bowl

Ingredients

  • 1 tbsp olive oil
  • 14 oz smoked sausage or kielbasa, sliced ½-inch thick
  • 1 small yellow onion, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, halved and sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups cooked rice (white, brown, or jasmine)
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced sausage and cook for 4–5 minutes until browned on both sides. Remove and set aside.
  3. In the same skillet, add the onion and bell peppers. Sauté for 3–4 minutes until slightly softened.
  4. Add the zucchini and cook another 3 minutes.
  5. Stir in the garlic, Italian seasoning, smoked paprika, salt, and pepper. Cook for 30 seconds until fragrant.
  6. Add the cherry tomatoes and cook for 2–3 minutes until they begin to soften.
  7. Return the sausage to the skillet and stir everything together.
  8. Serve the sausage and veggie mixture over warm cooked rice.
  9. Garnish with parsley or green onions if desired.

Optional Add-Ins

  • Crushed red pepper flakes for heat
  • Shredded Parmesan cheese
  • Spinach or kale for extra greens
  • A drizzle of hot sauce or balsamic glaze
