Ingredients
- 1 tbsp olive oil
- 14 oz smoked sausage or kielbasa, sliced ½-inch thick
- 1 small yellow onion, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium zucchini, halved and sliced
- 1 cup cherry tomatoes, halved
- 2 cups cooked rice (white, brown, or jasmine)
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley or green onions for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced sausage and cook for 4–5 minutes until browned on both sides. Remove and set aside.
- In the same skillet, add the onion and bell peppers. Sauté for 3–4 minutes until slightly softened.
- Add the zucchini and cook another 3 minutes.
- Stir in the garlic, Italian seasoning, smoked paprika, salt, and pepper. Cook for 30 seconds until fragrant.
- Add the cherry tomatoes and cook for 2–3 minutes until they begin to soften.
- Return the sausage to the skillet and stir everything together.
- Serve the sausage and veggie mixture over warm cooked rice.
- Garnish with parsley or green onions if desired.

- Crushed red pepper flakes for heat
- Shredded Parmesan cheese
- Spinach or kale for extra greens
- A drizzle of hot sauce or balsamic glaze
Tips
