Ingredients
- ½ medium cabbage, shredded (any type – white, green, or savoy)
- 2 large eggs
- 1 small onion, thinly sliced (optional)
- 1 garlic clove, minced (optional)
- Low-calorie cooking spray
- Salt & black pepper, to taste
- Pinch of chilli flakes or paprika (optional)
Method
- Spray a large frying pan or wok with low-calorie spray and heat.
- Add onion and garlic, cook until softened.
- Add shredded cabbage, stir-fry for 5–6 minutes until tender but still slightly crisp.
- Push cabbage to one side of the pan, crack eggs into the other side, scramble lightly, then mix through the cabbage.
- Season with salt, pepper, and optional chilli flakes or paprika.
- Serve hot as a quick lunch, side dish, or even with rice or noodles (count Syns if not wholemeal).
Syn-free on Slimming.
You can also add soy sauce, spring onions, or a splash of chilli sauce for a more Asian-style twist.
