Slimming-Friendly Pickled Beets

Ingredients:

  • 6 medium beets (washed & trimmed)
  • 1 cup white vinegar
  • 1 cup water
  • 3 tbsp sweetener (granulated, e.g. Stevia, Sukrin, or another Slimming Worldโ€“approved sweetener, instead of sugar)
  • ยฝ tsp salt
  • ยผ tsp ground cloves (optional, warm spice)
  • ยฝ tsp whole black peppercorns (optional)
  • 1 cinnamon stick (optional)

Instructions:

  1. Cook the Beets:
    • Place whole beets in a pot, cover with water, and bring to a boil.
    • Simmer for 30โ€“40 minutes until tender when pierced with a fork.
    • Drain, cool slightly, then peel off the skins (they should slip off easily).
    • Slice or cube the beets as you prefer.
  2. Make the Pickling Brine:
    • In a saucepan, combine vinegar, water, sweetener, salt, and spices.
    • Bring to a gentle simmer for 5 minutes to infuse flavors.
  3. Pickle the Beets:
    • Pack the cooked beets into clean glass jars.
    • Pour the hot brine over the beets, ensuring theyโ€™re fully covered.
    • Seal jars and let cool at room temperature before refrigerating.
  4. Chill & Enjoy:
    • Refrigerate for at least 24 hours before eating for the best flavor.
    • Keeps well for up to 2 weeks in the fridge.
