Ingredients:
- 6 medium beets (washed & trimmed)
- 1 cup white vinegar
- 1 cup water

3 tbsp sweetener (granulated, e.g. Stevia, Sukrin, or another Slimming Worldโapproved sweetener, instead of sugar)
- ยฝ tsp salt
- ยผ tsp ground cloves (optional, warm spice)
- ยฝ tsp whole black peppercorns (optional)
- 1 cinnamon stick (optional)

Cook the Beets:
- Place whole beets in a pot, cover with water, and bring to a boil.
- Simmer for 30โ40 minutes until tender when pierced with a fork.
- Drain, cool slightly, then peel off the skins (they should slip off easily).
- Slice or cube the beets as you prefer.

Make the Pickling Brine:
- In a saucepan, combine vinegar, water, sweetener, salt, and spices.
- Bring to a gentle simmer for 5 minutes to infuse flavors.

Pickle the Beets:
- Pack the cooked beets into clean glass jars.
- Pour the hot brine over the beets, ensuring theyโre fully covered.
- Seal jars and let cool at room temperature before refrigerating.

Chill & Enjoy:
- Refrigerate for at least 24 hours before eating for the best flavor.
- Keeps well for up to 2 weeks in the fridge.
