Ingredients
- 1 large broccoli, cut into florets
- Low-calorie cooking spray (or 1 tsp olive oil – 2 Syns)
- A handful of baby kale
- 1 small onion, diced
- 7 small garlic cloves, minced
- 12 cherry or grape tomatoes, halved
- 1 tsp dried oregano (or mixed herbs)
- 1 tsp smoked paprika
- Salt & black pepper to taste
- 200ml vegetable stock (from cube, Syn-free)
Method
- Preheat oven to 190°C (fan 170°C).
- Spray a frying pan with low-calorie spray (or heat olive oil if using). Sauté onion and garlic until soft.
- Add broccoli florets and kale, stir for 3 minutes.
- Add halved tomatoes, paprika, oregano, salt, and pepper. Cook for another 2 minutes.
- Transfer everything to a baking dish, pour over vegetable stock, and cover with foil.
- Bake for 25 minutes until broccoli is tender and casserole is bubbling.
- Remove foil, bake another 5–10 minutes to reduce liquid slightly.
Optional Toppings
- 40g reduced-fat cheddar (Healthy Extra A) sprinkled on top before final bake.
- Extra Syns: 1 tbsp light breadcrumbs (2 Syns).
