Ingredients (Serves 4):

  • 1 lb (450g) extra-lean ground beef (5% fat or less) – Syn-free
  • 1 medium onion, diced (Speed)
  • 2 cloves garlic, minced (Speed)
  • 2 medium carrots, diced (Speed)
  • 1 zucchini, diced (Speed)
  • 1 red bell pepper, chopped (Speed)
  • 1 cup green beans, chopped (Speed)
  • 1 cup sweetcorn (Free, not Speed)
  • 1 cup canned diced tomatoes (Speed)
  • 1 tbsp tomato paste (Syn-free)
  • 1 tsp paprika
  • ½ tsp dried thyme
  • Salt & pepper, to taste
  • ¼ cup water or beef stock, if needed
  • Fresh parsley, chopped (for garnish)
  • Low-calorie cooking spray (instead of olive oil)

Instructions:

  1. Cook Beef:
    Heat a large non-stick skillet. Spray with Frylight (only if needed). Add ground beef and onion, cook until beef is browned and onion softened. Drain any fat if necessary.
  2. Add Garlic & Veggies:
    Stir in garlic, carrots, zucchini, red pepper, and green beans. Cook 5–7 minutes until veggies begin to soften.
  3. Build the Sauce:
    Add diced tomatoes, tomato paste, sweetcorn, paprika, thyme, salt & pepper. Stir well.
  4. Simmer:
    Reduce heat, add a splash of water/stock if mixture seems too dry. Cover and simmer 10–15 minutes until vegetables are tender.
  5. Finish & Serve:
    Garnish with fresh parsley. Serve hot as is, or with whole wheat pasta, brown rice, or even on a baked potato.
