Cook Beef: Heat a large non-stick skillet. Spray with Frylight (only if needed). Add ground beef and onion, cook until beef is browned and onion softened. Drain any fat if necessary.
Add Garlic & Veggies: Stir in garlic, carrots, zucchini, red pepper, and green beans. Cook 5–7 minutes until veggies begin to soften.
Build the Sauce: Add diced tomatoes, tomato paste, sweetcorn, paprika, thyme, salt & pepper. Stir well.
Simmer: Reduce heat, add a splash of water/stock if mixture seems too dry. Cover and simmer 10–15 minutes until vegetables are tender.
Finish & Serve: Garnish with fresh parsley. Serve hot as is, or with whole wheat pasta, brown rice, or even on a baked potato.
