- 3โ4 boneless, skinless chicken breasts
- 1 cup chopped spinach (fresh or thawed frozen, squeezed dry)
- ยฝ cup cream cheese (softened)
- ยฝ cup shredded mozzarella
- 1 small tomato, sliced
- 2 cloves garlic, minced
- Salt, pepper, paprika (to taste)
- 1 tbsp olive oil

1๏ธโฃ Prep the Chicken
- Preheat oven to 190ยฐC (375ยฐF).
- Using a sharp knife, cut a pocket into the side of each chicken breast (donโt slice all the way through).
- Season inside and outside with salt, pepper, and paprika.
2๏ธโฃ Make the Filling
- In a bowl, mix:
- Spinach
- Cream cheese
- Mozzarella
- Garlic
- A pinch of salt & pepper
3๏ธโฃ Stuff the Chicken
- Spoon the mixture into each chicken pocket.
- Add 1โ2 tomato slices inside each.
- Secure with toothpicks if needed.
4๏ธโฃ Sear for Flavor
- Heat olive oil in a skillet over medium heat.
- Sear chicken 2โ3 minutes per side until golden.
5๏ธโฃ Bake
- Transfer to oven and bake 20โ25 minutes (internal temp should reach 75ยฐC / 165ยฐF).
- Rest 5 minutes before serving.
