Quick Description

These soft, creamy, high-protein egg bites are blended smooth with spinach, cottage cheese, cheese, and cooked sausage, then baked in molds for the perfect grab-and-go breakfast. Similar to Starbucks egg bites — but healthier, higher protein, and much cheaper.

Ingredients

Base Mixture

  • 8 large eggs
  • 1 cup cottage cheese
  • ½ cup shredded mozzarella or cheddar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon garlic powder

Add-Ins (as shown in image)

  • 1 cup spinach (fresh or frozen, squeezed dry)
  • ½ cup cooked sausage or ground turkey
  • ¼ cup green onions
  • ¼ cup diced bell pepper (optional)

Equipment

  • Blender
  • Silicone egg-bite molds

Instructions

1. Blend the egg base

Add to a blender:

  • Eggs
  • Cottage cheese
  • Cheese
  • Salt, pepper, garlic powder

Blend until smooth and creamy.


2. Add vegetables + sausage

Add spinach, cooked sausage, and green onions into the blender.
Pulse 2–3 times — do NOT fully puree.
You want texture like shown in the image.


3. Prepare molds

Lightly grease silicone egg-bite molds.
Pour the mixture into each cavity, filling about ¾ full.


4. Cook

Choose ONE method:

Oven Method

Bake at 325°F (160°C) for 18–22 minutes, until set but still soft.

Instant Pot Method

Cover molds with foil.
Add 1 cup water to Instant Pot.
Place molds on trivet.
Cook on Steam for 8–10 minutes, natural release 5 minutes.


5. Cool & store

Let egg bites cool for 5 minutes before removing from molds.


Storage & Meal Prep

Fridge:
Up to 5 days.

Freezer:
Up to 2 months.
Reheat in microwave 30–45 seconds.


Make It High-Protein

✔ Add extra egg whites
✔ Use 2% or low-fat cottage cheese
✔ Add more cooked turkey sausage
✔ Top with shredded cheese before baking
✔ Add finely chopped chicken breast or deli turkey
