Street Corn Chicken Casserole

Creamy, cheesy, and packed with bold street-corn flavor — an easy family favorite!

Ingredients

2 cups cooked, shredded chicken

4 cups corn kernels (fresh, canned, or frozen & thawed)

8 oz cream cheese, softened

½ cup sour cream

½ cup mayonnaise

1½ cups shredded mozzarella or Monterey Jack cheese (plus extra for topping)

½ cup grated Parmesan cheese

1 tbsp chili powder

½ tsp paprika

½ tsp garlic powder

Salt & black pepper, to taste

¼ cup chopped fresh cilantro

Juice of 1 lime

Optional: sliced jalapeños or hot sauce for extra heat

Instructions

1️⃣ Preheat oven to 375°F (190°C). Grease a baking dish.

2️⃣ In a large bowl, mix cream cheese, sour cream, and mayonnaise until smooth.

3️⃣ Stir in shredded chicken, corn, mozzarella, Parmesan, chili powder, paprika, garlic powder, salt, and pepper.

4️⃣ Add lime juice and cilantro. Mix well.

5️⃣ Spread mixture evenly into the prepared baking dish.

6️⃣ Sprinkle extra cheese on top.

7️⃣ Bake 25–30 minutes, until bubbly and lightly golden.

8️⃣ Garnish with more cilantro and jalapeños if desired. Serve hot.
