  • 4 large bell peppers (any color, tops cut off and seeds removed)
  • 1 lb (450g) ground meat (beef, turkey, or chicken)
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper, to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or mix)
  • Fresh parsley, for garnish ๐ŸŒฟ

  1. Preheat Oven:
    • Set your oven to 375ยฐF (190ยฐC).
  2. Prep the Peppers:
    • Slice off the tops of the peppers and remove seeds/membranes.
    • Optional: Blanch peppers in boiling water for 3โ€“5 minutes for extra tenderness.
  3. Cook the Filling:
    • In a skillet over medium heat, sautรฉ onion until soft (2โ€“3 min).
    • Add garlic, cook 1 min more.
    • Add ground meat, breaking it up until browned and fully cooked.
    • Stir in diced tomatoes, cooked rice, oregano, paprika, salt, and pepper.
    • Simmer for 5โ€“7 minutes to blend flavors.
  4. Stuff and Bake:
    • Fill each bell pepper with the meat mixture.
    • Top generously with shredded cheese.
    • Place in a baking dish with a splash of water or broth at the bottom to keep things moist.
    • Cover loosely with foil and bake for 30 minutes.
    • Uncover and bake an additional 10 minutes, or until cheese is bubbly and golden.
  5. Garnish & Serve:
    • Sprinkle with fresh parsley before serving.
