- 4 large bell peppers (any color, tops cut off and seeds removed)
- 1 lb (450g) ground meat (beef, turkey, or chicken)
- 1 cup cooked rice (white or brown)
- 1 can (15 oz) diced tomatoes (with juices)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt & pepper, to taste
- 1 cup shredded cheese (cheddar, mozzarella, or mix)
- Fresh parsley, for garnish ๐ฟ
๐ฅ Instructions:
- Preheat Oven:
- Set your oven to 375ยฐF (190ยฐC).
- Prep the Peppers:
- Slice off the tops of the peppers and remove seeds/membranes.
- Optional: Blanch peppers in boiling water for 3โ5 minutes for extra tenderness.
- Cook the Filling:
- In a skillet over medium heat, sautรฉ onion until soft (2โ3 min).
- Add garlic, cook 1 min more.
- Add ground meat, breaking it up until browned and fully cooked.
- Stir in diced tomatoes, cooked rice, oregano, paprika, salt, and pepper.
- Simmer for 5โ7 minutes to blend flavors.
- Stuff and Bake:
- Fill each bell pepper with the meat mixture.
- Top generously with shredded cheese.
- Place in a baking dish with a splash of water or broth at the bottom to keep things moist.
- Cover loosely with foil and bake for 30 minutes.
- Uncover and bake an additional 10 minutes, or until cheese is bubbly and golden.
- Garnish & Serve:
- Sprinkle with fresh parsley before serving.
