This classic summer pasta is made with ripe cherry tomatoes, fresh basil, garlic, and olive oil. It’s simple, clean, and full of bright flavors — the perfect warm-weather dish.


Ingredients (Serves 4–6)

  • 4 pints cherry tomatoes, halved
  • 1/2 cup extra-virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 lb (450 g) spaghetti or angel hair pasta
  • 1 cup fresh basil leaves, torn
  • 1/2–1 cup freshly grated Parmesan cheese

Instructions

Step 1 — Prepare the Tomatoes

Wash and halve the cherry tomatoes.
Add them to a large bowl with:

  • 1–2 teaspoons salt
  • A few grinds of black pepper
  • 2 tablespoons olive oil

Let the tomatoes rest while you continue. This helps release their natural juices and intensifies the flavor.


Step 2 — Infuse the Olive Oil

In a skillet, heat:

  • 1/2 cup olive oil
  • 6 thinly sliced garlic cloves

Cook on low heat for 4–6 minutes until the garlic becomes soft and lightly golden.
Avoid browning the garlic to keep the flavor sweet and mild.

Add red pepper flakes if using.


Step 3 — Cook the Pasta

Boil the pasta in salted water until al dente.
Reserve 1 cup of pasta water, then drain.


Step 4 — Combine the Ingredients

In a large pan or bowl, combine:

  • The tomatoes with their juices
  • The garlic-infused olive oil
  • The hot pasta

Add 1/4 to 1/2 cup of the reserved pasta water to help form a light, silky sauce.
Toss everything until well coated.

The heat from the pasta will soften the tomatoes and bring the flavors together.


Step 5 — Finish and Serve

Add:

  • Torn fresh basil
  • Grated Parmesan cheese
  • A drizzle of olive oil (optional)

Toss gently and serve warm.

  • Letting tomatoes rest with salt improves natural sweetness and juiciness.
  • Add basil only at the end to preserve its bright color and aroma.
  • Angel hair pasta creates the lightest texture.
