Ingredients (Serves 4–6)

  • 1 large baguette or Italian loaf
  • 3 ripe tomatoes, finely diced
  • 4 cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup olive oil
  • 1 tbsp balsamic vinegar
  • Salt and freshly cracked black pepper, to taste

Instructions

1. Prepare the Bread:

  1. Preheat oven to 375°F (190°C).
  2. Slice the baguette or loaf in half lengthwise, creating two long pieces.

2. Make the Tomato Basil Mixture:

  1. In a bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper.
  2. Mix well to combine.

3. Assemble:

  1. Spoon the tomato mixture evenly over the cut sides of the bread.
  2. Sprinkle with Parmesan cheese if using.

4. Bake:

  1. Place the bread on a baking sheet.
  2. Bake for 10–12 minutes, until the edges are crispy and the topping is warmed.

5. Serve:

  • Slice and serve warm as an appetizer, snack, or side dish.

Tips:
