Ingredients (Serves 4–6)
- 1 large baguette or Italian loaf
- 3 ripe tomatoes, finely diced
- 4 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup olive oil
- 1 tbsp balsamic vinegar
- Salt and freshly cracked black pepper, to taste
Instructions
1. Prepare the Bread:
- Preheat oven to 375°F (190°C).
- Slice the baguette or loaf in half lengthwise, creating two long pieces.
2. Make the Tomato Basil Mixture:
- In a bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper.
- Mix well to combine.
3. Assemble:
- Spoon the tomato mixture evenly over the cut sides of the bread.
- Sprinkle with Parmesan cheese if using.
4. Bake:
- Place the bread on a baking sheet.
- Bake for 10–12 minutes, until the edges are crispy and the topping is warmed.
5. Serve:
- Slice and serve warm as an appetizer, snack, or side dish.
Tips:
- For extra crispiness, broil for the last 1–2 minutes, watching closely to avoid burning.
- Add a drizzle of balsamic glaze after baking for a sweeter, tangy finish.
- Can be prepared ahead of time; assemble just before baking.
