Instructions:

    Preheat your oven to 375°F (190°C). Butter the inside of 6 ramekins generously and sprinkle with sugar to coat. Set them aside.

Slowly whisk in the hot milk into the egg mixture, stirring constantly. Return the mixture to the saucepan and cook over low heat while stirring constantly until thickened (about 5 minutes). Remove from heat and set aside.
  3. Make the Meringue:
    In a clean mixing bowl, whisk the egg whites and cream of tartar until soft peaks form. Gradually add the sugar and continue whisking until stiff peaks form.
  4. Combine:
    Gently fold the meringue into the soufflé base, being careful not to deflate the mixture.
  5. Fill the Ramekins:
    Spoon the soufflé mixture into the prepared ramekins, filling them about 3/4 full. Smooth the tops with a spatula and run your finger around the rim to ensure a clean edge.
  6. Bake:
    Place the ramekins on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the soufflés have puffed up and are golden brown on top.
  7. Serve:
    Dust with powdered sugar and serve immediately while still puffed and warm.
