  • 4 cupsย fresh baby spinach
  • 9 oz.ย refrigerated cheese tortellini (look for a lower-point brand if possible)

Instructions

  1. Brown the Turkey:ย In a large stockpot or Dutch oven, cook the ground turkey and diced onion over medium-high heat. Use a wooden spoon to break up the turkey as it cooks. Cook until the turkey is no longer pink and the onion is soft (about 5-7 minutes). Add the minced garlic and cook for one more minute until fragrant.
  2. Create the Broth:ย Add the chicken broth, diced tomatoes (with their juice), Italian seasoning, salt, black pepper, and red pepper flakes (if using) to the pot. Stir to combine.
  3. Simmer:ย Bring the soup to a boil, then reduce the heat to low and let it simmer for about 10 minutes to allow the flavors to meld.
  4. Cook the Tortellini:ย Increase the heat to medium-high to return the soup to a boil. Add the refrigerated tortellini and cook according to the package directions (usually about 7-9 minutes).
