Ingredients
- 1 cup (225g) low-fat or fat-free cottage cheese – 0–2 Points (fat-free is 0)
- 2 tbsp unsweetened cocoa powder – 1 Point
- 2–3 tbsp zero-calorie sweetener (like Stevia, monk fruit, or Splenda) – 0 Points
- 1 tsp vanilla extract – 0 Points
- Pinch of salt – 0 Points
- Optional toppings:
- A few sugar-free chocolate chips (about ½ tbsp = 1 Point)
- Fresh berries (0 Points)
- Fat-free whipped topping (1 tbsp = 0 Points)
Instructions
- Blend cottage cheese in a food processor or high-speed blender until completely smooth and creamy.
- Add cocoa, sweetener, vanilla, and salt. Blend again until mousse-like texture forms.
- Taste & adjust – add more sweetener or cocoa if needed.
- Chill in the fridge for 30–60 minutes before serving for best texture.
- Serve in ramekins or small bowls, topped with berries or a spoon of light whipped topping.
