Ingredients (Makes ~24 cookies):
- 4 tbsp light butter (or ยฝ cup unsweetened applesauce)
- ยฝ cup brown sugar substitute (like Swerve Brown or Lakanto Golden)
- ยผ cup granulated sugar substitute (like Stevia, Truvia, or monk fruit)
- 2 large eggs (or ยฝ cup egg substitute)
- 2 tsp vanilla extract
- 1 cup all-purpose flour (can swap with white whole wheat flour for fiber)
- ยฝ tsp baking soda
- ยฝ tsp ground cinnamon
- Pinch of salt
- 2 cups old-fashioned rolled oats
- ยฝ cup chopped pecans (or walnuts)
Instructions:
