Ingredients (Lightened-Up):
- 2 cups fresh (or frozen, thawed) corn kernels
- ½ cup reduced-fat shredded cheddar (or mozzarella)
- ½ cup whole wheat flour (instead of 1 cup all-purpose)
- 1 tsp baking powder
- 2 large eggs (or 1 egg + 2 egg whites to cut points)
- 2 tbsp finely chopped green onions
- 2 tbsp plain nonfat Greek yogurt (adds moisture without oil)
- Cooking spray (instead of oil for frying)
- Salt & pepper to taste
Instructions:
- In a bowl, whisk eggs, yogurt, salt, and pepper until smooth.
- Stir in corn, cheese, green onions, flour, and baking powder until combined.
- Heat a nonstick skillet over medium heat and spray lightly with cooking spray.
- Drop spoonfuls of the mixture, flatten slightly, and cook 2–3 minutes per side until golden brown and crispy.
- Serve warm with a side of salsa or a dollop of nonfat Greek yogurt instead of sour cream.
