🌽 WW-Friendly Cheesy Corn Fritters

Ingredients (Lightened-Up):

  • 2 cups fresh (or frozen, thawed) corn kernels
  • ½ cup reduced-fat shredded cheddar (or mozzarella)
  • ½ cup whole wheat flour (instead of 1 cup all-purpose)
  • 1 tsp baking powder
  • 2 large eggs (or 1 egg + 2 egg whites to cut points)
  • 2 tbsp finely chopped green onions
  • 2 tbsp plain nonfat Greek yogurt (adds moisture without oil)
  • Cooking spray (instead of oil for frying)
  • Salt & pepper to taste

Instructions:

  1. In a bowl, whisk eggs, yogurt, salt, and pepper until smooth.
  2. Stir in corn, cheese, green onions, flour, and baking powder until combined.
  3. Heat a nonstick skillet over medium heat and spray lightly with cooking spray.
  4. Drop spoonfuls of the mixture, flatten slightly, and cook 2–3 minutes per side until golden brown and crispy.
  5. Serve warm with a side of salsa or a dollop of nonfat Greek yogurt instead of sour cream.
