Ingredients
2 medium zucchinis, sliced thin lengthwise
1/2 cup cottage cheese
1/4 cup shredded mozzarella
1 large egg
1/2 tsp garlic powder
1/2 tsp Italian seasoning
Salt & pepper to taste
Olive oil spray

Instructions
1. Slice zucchini into thin strips using a mandolin.
2. Salt lightly and pat dry after 5 minutes.
3. Mix cottage cheese, mozzarella, egg, and seasonings in a bowl.
4. Lay two zucchini strips overlapping and add 1 tbsp of filling.
5. Roll tightly into spring rolls.
6. Preheat air fryer to 375°F.
7. Spray basket with olive oil and arrange rolls in a single layer.
8. Air fry 10–12 minutes until golden and crispy, flipping halfway.
9. Cool slightly before serving.
Notes
Use even slices for uniform cooking.
Add your favorite veggies for flavor variety.
Reheat leftovers in the air fryer for 3 minutes.
Best served warm with marinara or yogurt dip.
