Salt & any herbs of your choice, sesame seeds for topping
Instructions
- Prepare the flaxseed flour: Use a blender or food processor to grind 180 g of flax seeds into a fine flour. Set aside.
- Whip egg whites: In a large bowl, beat 500 g of egg whites with an electric mixer until frothy but not stiff.
- Combine: Gently fold the ground flaxseed into the frothy egg whites until just combined. Do not overmix to keep the bread airy.
- Prepare the pan: Grease or line a loaf pan with parchment paper.
- Bake: Pour the batter into the pan, spreading evenly. Bake in a preheated oven at 180°C (356°F) for 35 minutes.
- Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy.
Tips & Notes
- Texture: Flaxseed bread is slightly denser than chia seed bread but still soft.
- Protein boost: For extra protein, you can add 1–2 scoops of unflavored protein powder into the flaxseed flour.
- Serving ideas: Toast and top with avocado, nut butter, or low-fat cheese.
