Ingredients

  • 180 g flax seeds, ground into fine flour

    Salt & any herbs of your choice, sesame seeds for topping

Instructions

  1. Prepare the flaxseed flour: Use a blender or food processor to grind 180 g of flax seeds into a fine flour. Set aside.
  2. Whip egg whites: In a large bowl, beat 500 g of egg whites with an electric mixer until frothy but not stiff.
  3. Combine: Gently fold the ground flaxseed into the frothy egg whites until just combined. Do not overmix to keep the bread airy.
  4. Prepare the pan: Grease or line a loaf pan with parchment paper.
  5. Bake: Pour the batter into the pan, spreading evenly. Bake in a preheated oven at 180°C (356°F) for 35 minutes.
  6. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy.
