Quick & Easy High-Protein Pancakes

Ingredients
For the Pancakes
- 1 cup cottage cheese
- 2 large eggs
- 1 ripe banana
- ¾ cup rolled oats
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- Pinch of salt
- 1–2 tablespoons milk, if needed
- Cooking spray or a little butter for the pan

Instructions
1. Blend the Batter
Add cottage cheese, eggs, banana, rolled oats, baking powder, vanilla, cinnamon, and salt to a blender. Blend for 30–45 seconds, until mostly smooth.
If the batter is too thick, add 1 tablespoon of milk and blend again. Add another tablespoon only if needed.
2. Let It Rest
Allow the batter to rest for 2–3 minutes. This gives the oats time to absorb some moisture and helps create a thicker pancake batter.
3. Heat the Pan
Place a nonstick skillet or griddle over medium-low to medium heat. Lightly coat with cooking spray or a small amount of butter.
Avoid high heat because the banana can cause the pancakes to brown too quickly.
4. Cook the Pancakes
Pour about ¼ cup of batter onto the skillet for each pancake. Cook for 2–3 minutes, until bubbles appear and the edges look set.
Carefully flip and cook for another 1–2 minutes, until golden and cooked through. Repeat with the remaining batter.
5. Serve
Serve warm with your favorite toppings. Fresh berries, Greek yogurt, banana, cinnamon, or a small drizzle of maple syrup are all delicious choices.
Tips for Perfect Pancakes

No Blender?
Mash the banana thoroughly with a fork, then whisk in the eggs and cottage cheese. Stir in the oats, baking powder, vanilla, cinnamon, and salt. The pancakes will have a slightly more textured finish but will still taste delicious.
For smoother pancakes, use oat flour instead of rolled oats.
