- 1 lb lean ground beef or ground turkey (93–99% lean)
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 2 cups high-protein mashed potatoes
(store-bought high-protein, or homemade mashed potatoes mixed with Greek yogurt) - Salt & black pepper (counts as one ingredient together)
Instructions

Preheat the oven
Preheat oven to 400°F (205°C). Lightly grease a baking dish. -
Cook the meat
In a skillet over medium heat, cook the ground beef or turkey until fully browned.
Season with salt and pepper. -
Add the vegetables
Stir in the frozen mixed vegetables and cook for 2–3 minutes, just until heated through. -
Assemble
Spread the meat and veggie mixture evenly into the baking dish. -
Top with potatoes
Spoon the mashed potatoes over the top and smooth evenly. -
Bake
Bake for 20–25 minutes, until hot and lightly golden on top. -
Rest & serve
Let rest for 5 minutes before serving.
