For the Salad:

  • 4 cups mixed greens (spinach, arugula, or spring mix)
  • 1–2 medium apples, thinly sliced
  • ½ cup walnuts, toasted
  • ¼ cup crumbled feta or goat cheese (optional)
  • ¼ red onion, thinly sliced (optional)

For the Honey Dijon Dressing:

  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 2 tbsp apple cider vinegar or lemon juice
  • 2 tbsp olive oil
  • Salt and pepper, to taste

  1. Toast the walnuts: In a dry skillet over medium heat, toast walnuts for 2–3 minutes until fragrant. Set aside to cool.
  2. Prepare the dressing: In a small bowl, whisk together Dijon mustard, honey, vinegar (or lemon juice), olive oil, salt, and pepper until smooth.
  3. Assemble the salad: In a large bowl, combine mixed greens, sliced apples, red onion, and toasted walnuts.
  4. Add cheese: Sprinkle crumbled feta or goat cheese over the top, if using.
  5. Dress the salad: Drizzle the honey Dijon dressing over the salad just before serving and toss gently to coat.
