Ingredients

- 2 cups curly lettuce
- 2 tomatoes, diced
- 1 tbsp fresh parsley, chopped

Instructions
1. Cook the Rice
Combine the rice, water, and salt in a saucepan.
Bring to a boil, then reduce the heat, cover, and simmer for 15โ18 minutes until tender and fluffy.
Fluff with a fork and garnish with fresh parsley.
2. Prepare the Fries
Preheat the oven to 220ยฐC (425ยฐF).
Toss the potato fries with vegetable oil and salt.
Spread onto a baking tray and bake for 30โ35 minutes, turning halfway through, until golden and crispy.
