Ingredients
Blueberry Layer
- 2 cups fresh blueberries
- 2 tbsp sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch
- 1 tbsp water
Marshmallow Filling
- 8 oz (225 g) cream cheese, softened
- 1 cup marshmallow fluff
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- 2 tbsp powdered sugar
Crust & Topping
- 18 graham crackers
- 4 tbsp unsalted butter, melted
- 1 cup mini marshmallows
- ½ cup crushed graham crackers
- ½ cup white chocolate chips (optional)
Instructions
Step 1: Make the Blueberry Filling
- Add blueberries, sugar, and lemon juice to a saucepan.
- Cook over medium heat for 5–7 minutes until the berries burst.
- Mix cornstarch with water and stir into the blueberries.
- Cook another 1–2 minutes until thickened.
- Let cool completely.
Step 2: Prepare the Graham Cracker Base
- Line an 8×8-inch baking pan with parchment paper.
- Arrange a single layer of graham crackers on the bottom.
- Brush lightly with melted butter.
Step 3: Make the Marshmallow Cream
- Beat the cream cheese until smooth.
- Add marshmallow fluff, powdered sugar, and vanilla.
- In another bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the marshmallow mixture until fluffy.
Step 4: Assemble
- Spread half of the marshmallow mixture over the graham crackers.
- Spoon the cooled blueberry filling evenly on top.
- Add the remaining marshmallow mixture.
- Sprinkle with mini marshmallows, crushed graham crackers, and white chocolate chips if using.
- Cover with another layer of graham crackers.
Step 5: Freeze
- Cover tightly with plastic wrap or foil.
- Freeze for 4–6 hours or overnight.
Step 6: Serve
- Remove from the freezer and let sit for 5–10 minutes.
- Slice into squares with a sharp knife.
- Serve frozen or slightly softened.
Tips
- Toast the mini marshmallows with a kitchen torch before serving for classic s’mores flavor.
- Wild blueberries provide a more intense blueberry taste.
- Store in an airtight container in the freezer for up to 2 months.
