Ingredients
- 1 cup blueberries (fresh or frozen)
- 1ยฝ cups rolled oats
- 2 large eggs
- 1/3 cup honey
- 1/2 cup milk (dairy or plant-based)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Preheat Oven โ Preheat your oven to 350ยฐF (175ยฐC). Line an 8ร8-inch baking pan with parchment paper.
- Mix Wet Ingredients โ In a medium bowl, whisk together eggs, honey, milk, and vanilla extract until well combined.
- Combine Dry Ingredients โ In a separate bowl, mix oats and cinnamon.
- Form Base โ Add half of the oats mixture into the wet ingredients and stir until combined. Press this mixture into the bottom of the prepared pan to form the base layer.
- Add Blueberries โ Evenly scatter blueberries over the base layer.
- Top Layer โ Mix the remaining oats into the wet mixture lightly and sprinkle or spread over the blueberries.
- Bake โ Bake for 25โ30 minutes or until the top is golden brown and set.
- Cool & Slice โ Allow the bars to cool completely before cutting into 12 squares.
