Soft, juicy blueberry-filled oat bars with a lightly crisp top—perfect for breakfast, meal prep, or an afternoon snack.

Ingredients

  • 1 cup blueberries (fresh or frozen)
  • 1½ cups rolled oats
  • 2 eggs
  • ⅓ cup honey or maple syrup
  • ½ cup milk (any kind)
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat oven
    Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
  2. Mix wet ingredients
    In a large bowl, whisk together eggs, honey (or maple syrup), milk, and vanilla extract.
  3. Add dry ingredients
    Stir in oats, cinnamon, baking powder, and salt until combined.
  4. Fold in blueberries
    Gently fold in the blueberries. If using frozen berries, do not thaw first.
  5. Bake
    Pour the mixture into the prepared baking dish and spread evenly. Bake for 30–35 minutes, or until the top is lightly golden and set.
  6. Cool and slice
    Let cool for at least 10 minutes before slicing into bars.
