2 cups fresh spinach (or frozen, drained well)
1 cup shredded cheese (mozzarella, cheddar, or mixed)
½ cup feta cheese (optional but recommended)
1 small onion, finely chopped
2 eggs
¼ cup milk
Salt & black pepper, to taste

Instructions

Prepare the dough
In a large bowl, combine flour, baking powder, sugar, and salt. Add cold cubed butter and mix using your fingers until the mixture resembles coarse crumbs.

Add wet ingredients
Add egg, lemon juice, and cold water. Mix gently until dough forms. Do not overmix. Shape into a ball, cover, and refrigerate for 15 minutes.

Prepare the filling
In another bowl, combine spinach, shredded cheese, feta cheese, chopped onion, eggs, milk, salt, and pepper. Mix until well combined.

Roll out the dough
