Cheesy Ground Beef & Bell Pepper Bake

Tender ground beef, colorful bell peppers, savory seasonings, and plenty of melted mozzarella make this an easy, family-friendly dinner that’s naturally low in carbs.

Ingredients

  • 1 lb (450g) lean ground beef
  • 3 bell peppers (red, green, and yellow), sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the onion and bell peppers. Cook for 4–5 minutes until slightly tender.
  4. Stir in the garlic and cook for 30 seconds.
  5. Add the ground beef and cook until browned, breaking it into crumbles. Drain excess grease if needed.
  6. Season with Italian seasoning, smoked paprika, onion powder, salt, pepper, and Worcestershire sauce. Stir well and cook for another 2 minutes.
  7. Divide the mixture between two small baking dishes or place everything into one 9-inch baking dish.
  8. Sprinkle mozzarella and cheddar evenly over the top.
  9. Bake for 12–15 minutes, until the cheese is melted and bubbly.
  10. Broil for 2–3 minutes for a golden, slightly browned cheese topping.
  11. Garnish with fresh parsley and serve hot.
