🧾 Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (15 oz) corn, drained
  • 3 cups chicken or beef broth
  • 4 oz cream cheese, cubed
  • 1½ cups shredded cheddar cheese
  • ½ cup heavy cream (or milk)
  • Salt & pepper, to taste

Optional toppings: sour cream, jalapeños, avocado, green onions


👩‍🍳 Instructions

  1. Brown the meat
    In a large pot over medium heat, cook ground beef with onion until browned. Drain excess fat if needed. Add garlic and cook 30 seconds.
  2. Season & build flavor
    Stir in taco seasoning, Rotel, beans, corn, and broth. Bring to a gentle boil.
  3. Simmer
    Reduce heat and simmer uncovered for 10–15 minutes, stirring occasionally.
  4. Make it creamy
    Lower heat. Add cream cheese and stir until fully melted and smooth.
  5. Cheese it up
    Stir in cheddar cheese and heavy cream. Heat gently until creamy and thickened (do not boil).
  6. Taste & serve
    Adjust seasoning. Serve hot with your favorite toppings.

  • Low-carb: Skip beans & corn, add cauliflower rice
  • Extra spicy: Add cayenne or hot sauce
  • Slow cooker: Brown meat first, then cook on LOW 4–5 hrs
  • Keto: Use heavy cream only + full-fat cheeses
