🧾 Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 can (10 oz) Rotel (diced tomatoes with green chilies)
- 1 can (15 oz) black beans, drained & rinsed
- 1 can (15 oz) corn, drained
- 3 cups chicken or beef broth
- 4 oz cream cheese, cubed
- 1½ cups shredded cheddar cheese
- ½ cup heavy cream (or milk)
- Salt & pepper, to taste
Optional toppings: sour cream, jalapeños, avocado, green onions

Brown the meat
In a large pot over medium heat, cook ground beef with onion until browned. Drain excess fat if needed. Add garlic and cook 30 seconds. -
Season & build flavor
Stir in taco seasoning, Rotel, beans, corn, and broth. Bring to a gentle boil. -
Simmer
Reduce heat and simmer uncovered for 10–15 minutes, stirring occasionally. -
Make it creamy
Lower heat. Add cream cheese and stir until fully melted and smooth. -
Cheese it up
Stir in cheddar cheese and heavy cream. Heat gently until creamy and thickened (do not boil). -
Taste & serve
Adjust seasoning. Serve hot with your favorite toppings.

- Low-carb: Skip beans & corn, add cauliflower rice
- Extra spicy: Add cayenne or hot sauce
- Slow cooker: Brown meat first, then cook on LOW 4–5 hrs
