Total Time: ~2 hours 10 minutes

Ingredients

Main Ingredients

  • 2 cups cottage cheese
  • 2 cups fresh blueberries
  • ½ cup honey (or maple syrup)
  • 1 tsp vanilla extract

Chocolate Coating

  • 2 cups dark chocolate chips
  • 2 tsp coconut oil

Optional Add-Ins & Toppings

  • ½ tsp cinnamon or cardamom (warm spice boost)
  • Zest of 1 lemon or orange (bright citrus note)
  • Sprinkle of sea salt (sweet-salty finish)
  • Crushed almonds or pistachios (for crunch)

Instructions

  1. Mix the filling
In a medium bowl, combine cottage cheese, blueberries, honey, vanilla, and any optional spices or zest. Gently mix until everything is evenly coated.
  2. Scoop & freeze
Line a baking sheet with parchment paper. Drop spoonfuls (about 1½–2 tablespoons each) of the mixture onto the sheet.
Freeze for at least 2 hours, or until completely firm.
  3. Melt the chocolate
Melt the dark chocolate chips with coconut oil using a microwave (in 20–30 second intervals, stirring between) or a double boiler until smooth and glossy.
  4. Dip & set
Dip each frozen cluster halfway into the melted chocolate or drizzle chocolate over the top.
Return to the freezer for 10–15 minutes, until the chocolate sets.
  5. Serve or store
Enjoy straight from the freezer, or let sit at room temperature for 2–3 minutes for the perfect creamy bite.

Additional Notes

  • Texture Tip: Using full-fat cottage cheese gives the creamiest result, but low-fat works too.
  • Extra Protein: You can mix in 1–2 tablespoons of vanilla protein powder if desired (texture will be slightly thicker).
  • Meal Prep Friendly: These are perfect for make-ahead snacks or late-night cravings.

Storage

  • Store in an airtight container in the freezer for up to 2 weeks.
  • Best enjoyed slightly softened after a couple of minutes out of the freezer.

Variations

  • Dairy-Free: Use dairy-free cottage-style alternatives and vegan chocolate.
  • Low-Sugar: Swap honey for a sugar-free syrup and use 85% dark chocolate.
  • Nutty Version: Roll clusters in crushed nuts before freezing, then dip in chocolate.
